FOOD AND DRINK ADMINISTRATION (SAB)

What is it?
The EX REC course, or SAB course, is the retail trade course related to the food commodity sector for public food and beverage administration activities.
The course is recognized by the Lazio Region and is essential for anyone who wants to open any food retail and/or food and beverage administration business.
Course Duration and Content
The course lasts 120 hours, and the training content covers the following topics:
- Commercial law and business administration
- Commercial legislation
- Tax legislation
- Social and criminal legislation
- Health and hygiene legislation
- Sales techniques
- Food commodity science
- Health, safety, and consumer information
- Food product hygiene HACCP: obligations, responsibilities, and penalties
Attendance is mandatory, with a maximum of 24 hours of absence. This means that admission to the final exam is granted if at least 80% of the total course hours are attended.
Certificate Issued
At the end of the training program, a final exam is scheduled, upon passing which the student will be issued the Certificate of Qualification for Food and Beverage Administration/Sales, which has legal value throughout the national territory.

- Upper Secondary Education Diploma or at least three-year professional qualification
- Knowledge of the Italian language adequate for understanding the subjects of study
- Regularity of stay in Italy
- Motivation to pursue helping professions
